A Taste of La Dolce Vita, No Passport Required

Hello Reader,

At last, glimpses of sunny days are on the horizon!

I don't know about you, but I’m ready to indulge in a little taste of La Dolce Vita. Join me in savoring the flavors of Italy without the airfare.

This stunning tomato galette captures the essence of our leisurely wanders through local markets in tiny Italian borghi, searching for the best sun-ripened produce at the peak of summer.

Take your time artfully arranging the jewel-toned pomodori. Focus on the sensations - the sun on your cheeks, the fragrant herbs between your fingers, the anticipation of flavors to come.

Soon your kitchen will transport you away with aromas as this galette bakes to perfection. You'll find a slice of dolce waiting when you return from your aperitivo in the golden hour glow.

Tomato galette

Ingredients for 4 people:

700g tomatoes (mixed, different colors and shapes)

1 roll shortcrust pastry (ready-made to make it easy on you)

basil

1 egg

1 tbsp linseed

2 tbsp white wine vinegar

2 tbsp olive oil

pepper and salt

Preparation:

1 Preheat the oven to 180°C. Cut the large tomatoes in half. You can leave the smaller ones whole or cut them in half. Beat the egg with a splash of water.

2 Unroll the shortcrust pastry and place on a baking tray lined with baking paper. Arrange the tomatoes criss-cross on top. Keep 4 cm free from the edges. Fold the edges in and brush with the beaten egg. Sprinkle the edges with linseed.

3 Bake the galette in the oven for 25 minutes. Remove it from the oven and finish with a few basil leaves. Drizzle with a few drops of white wine vinegar and serve warm.
